to brew the perfect cup:

Brewing
coffee is both an art and a skill that can be mastered with a little practice
and patience. A great cup of coffee can be made every time, once you learn
the basics. By following the steps described below, you should be able
to have a perfect cup of coffee every time.

Getting
the right coffee: Be
sure to purchase the freshest, highest-quality beans possible. Taste different
varieties. Learn about the characteristics of each one. Try coffees with

Storage
of the beans: Storage of your beans is
very critical. Light, heat, and air are all factors that can lead to the
deterioration of the freshness and quality of your coffee. Store your beans
in airtight containers. Store in a cool, dark area. Refrigerating or freezing
the beans will prolong flavor life. |

Equipment:
Use clean, quality brewing equipment and accessories. |

Clean
water: Use the purest source of water.
If your water has chemicals, chlorine, or other impurities, try using bottled
water. Fresh, clean water is essential for a great cup. |

Water
temperature: The temperature of the water
has a lot to do with the flavors that are brought out in your cup. The ideal
water temperature is between 190 and 205 degrees. |

The
right grind: Use
the right grind for the right brewing method. You can easily destroy the
taste with a wrong grind. Too course, and the taste will be weak and sour.
Too fine, and the taste will be bitter. Grind the beans just before use. |

Proportions:
Getting the right proportion of coffee
to water is more of a personal palate decision. More grounds will make it
stronger, less grounds will make it weaker. We suggest you start with 2
Tbs. for every 8 ounces of water. |

Freshness:
Use the freshest beans, the freshest water,
and grind your beans just before brewing. Then serve it fresh. |

Cupping:
"Cupping"
is what it is all about. If you have a perfect cup of coffee, then consider
